Our beef is sourced directly from the producers and dry aged on our premises.
The dry ageing process is important as it brings a better flavour to the beef than that of the more common wet aging in cryovac, which in essence is really preserving the beef.
This however takes a big commitment as we have many tonnes of beef ageing at any one time.
We believe that the three types of beef we have are representative of the best of their type in Australia.
Blackmore’s Wagyu, Cape Grim and Minderoo all fit into the strict Rockpool philosophy of humane treatment to the cattle.
There are no growth hormones used and no antibiotic feed supplements.
This is a rare thing in Australia today, particularly with the standard lot fed cattle.

Ocean 12 is the newest edition to Crown and they’ve certainly come to play.
The bar which is located at the former Studio 3, features 60 Cuban cigar varieties and more than 400 types of whiskey. Yes, 400!
Of course, there are others in Melbourne who boast equally, if not more slightly more impressive numbers of the good stuff (*doffs hat to Whisky and Alement*) but 400 is nothing to sneeze at! The owners described it as “one of the largest assortments in Australia“.
Did we mention they’ve also got more than 30 private karaoke rooms?
Smash your way through more 140,000 songs in six languages, including English, Japanese, Korean and Khmer.
The rooms range from intimate spaces to large apartment-sized rooms, and some come with a dedicated bartender, private cigar terrace, city skyline and Yarra River views.

The cigar lounge boasts uninterrupted views of Melbourne’s skyline, with a selection of Cuban’s including Hoyo de Monterrey Petit Robusto, Cohiba Siglo IV, Montecristo Montecristo No. 2 and H. Upmann Magnum 54… you know, if you’re into that sort of thing.

Speaking of whiskey, Ocean 12 has partnered with LVMH’s Hennessy to create an ever-changing menu of more than 400 whiskies.
Whiskey lovers can choose from classic to independent bottlings to some of the world’s rarest tipples and if you’re a whiskey nerd, you can sink your dosh into varieties not found anywhere else in Australia, including:
- Yamazaki 18 year Mizunara Oak Cask 2017 release
- Macallan Reflexion 1st Fill Sherry Hogsheads
- Glenfarclas Family Cask 1966 Fino Cask
- and Laphroaig 30 Year Old distilled in 1995 .
Non-whiskey drinkers are also catered for, thanks to a large selection of premium local and international spirits, beers and wines.
Yes, there’s food too.
A terrace tapas restaurant features a menu from chef Alan Liu, with dishes including Mediterranean Chips Potato Bonilla with Espinaler Foam, Sobrasada with Mahon Cheese a nd Honeycomb and Chorizo Lollipops with Gorgonzola.

Feeling peckish? Don’t stress, the menu also features larger plates. Get stuck into dishes, including Squid Ink Paella with Seafood, Tuna Loin with Candied Onion and Roasted Pork Ribs with Chimichurri and “Mojo” with Rosemary Roasted Potato.
Ocean 12 officially opens Thursday, 8 August and will welcome guests seven days a week from 6pm – 5am.
